Overlooking the bay, a family affair with the Miami HEAT made for another incredible evening with the HEAT Charitable Foundation!
Guests arrived at the American Airlines Arena just before sunset. As vehicles were whisked away, guests entered through the newly remodeled VIP Lexus entrance before enjoying cocktail hour inside the HEAT locker room. The opportunity to mix and mingle with HEAT Players and key staff is one guests will likely never forget!
Guests moved to the beautiful Xfinity Plaza after cocktail hour, for a night of dinner and dancing. A twist on previous HEAT gala designs, this year’s color scheme swapped out red, for blush! Our design concept for dinner used a modern mix of custom wrapped acrylic royal tables, and mirror-topped round tables. Each royal table was set with a black and white marble print, with black ghost chairs. Additional accents include rose gold flatware and chargers. Our round tables consisted used shimmering silver underlays with blush “coin” overlays plus a reflective mirror topper, set against clear acrylic ghost chairs. For accents, we used hammered matte black flatware and swirled black and white charger for a smoke effect.
Because no party is complete without florals – we focused on white and blush tones of tulips, callas, anemones and more in clear glass vases to show lots of gorgeous green stems. And of course = plenty of candlelight!
Along with plenty of fun and games with the HEAT players, the guests ended the evening with an incredible performance by Mary J. Blige!

We all know summer is all about the watermelon – but how many different ways can you really make it different? We’re adding one more preparation to your repertoire in the form of pickled watermelon radish slaw. We sat down with Executive Chef Elgin Woodman to see her thought process behind one of her mini plates – Coriander Cured Tuna Pastrami with Pickled Watermelon Radish Slaw and Avocado Puree.
This recipe is really an infusion of three diverse cultural flavors. The Watermelon radish slaw involves a pickling process inspired by Asian food culture. The rub used on the cured Tuna is composed of special Mediterranean spices for a slight “kick”. Finally, the Avocado Cream sauce adds a signature Latin layer of culture. The resulting dish is a blend of freshness and flavor profiles representing the diversity of the region. Additionally, this dish has a multitude of ways to be presented above and beyond just a mini plate. Appetizers, antipasto stations, small plate courses, salads and so many more food styles could benefit from this fresh dish. As an added benefit, this is a wonderful way to add proteins to antipasto stations where red meats and pork are not an option.
Nothing beats having top quality components to savor during an event, and this creation made sure to deliver. This is a critical component to the Home Cured Tuna with Watermelon Radish Slaw. The production of it begins with buying the freshest tuna and curing it two days prior to your event. When the tuna is finished curing, our culinary team cleans the rub and re-wraps it for event delivery. The tuna remains uncut until just before service to maintain freshness and color. The slaw and avocado cream are also prepped and mixed onsite to ensure a crisp slaw and green avocado in every bite.

COLOR YOUR WORLD
- Unicorn Swirls – The world has caught Miami-fever, and we’re loving it. Bright pastels and neon colors have really taken off this summer! Tablescapes, food, flowers and design elements have all pulled from the neon fashion trend. Need more evidence? Raise your hand if you’ve fallen victim to the unicorn craze (it’s ok, our hands are up too). Fuchsia and purple add a dose of warmth to your summer style palette, and transition well from day to night.
- Greenery – green hues are known for giving freshness to your design. This makes it easy to incorporate using beautiful plants and floral centerpieces with exposed stems. Add a few tall and gorgeous greens in beautiful planters to accent your next event. Not only will they provide eye-catching perimeter décor, but they serve as great room dividers and additional shade for lounge areas.
- Mood: Sunny – yellow is always a strong summer hue, thanks to the sun! Add a bright pop of color in your linens and flowers using yellow tones. For food, try incorporating dishes that use mango, passionfruit and lemons!
SMELL THE ROSES…AND THE LEMONS
For easy accents to your tables, pick flowers that hold up well to the summer heat! Think proteas, callas, succulents, tropical leaves and orchids – they’ll all hold up perfectly in a gorgeous vase. For a pop, add lemons or mix in pineapples to brighten the look.
Since we’re talking summer – we hope you’ll be spending plenty of time near a pool because it is HOT! As a fun and interactive décor add-on for your next summer event, beach balls and pool inflatables are back and better for this summer’s event style. Flamingos, donuts, lemon slices, unicorns and even pizza have made the cut – they’re a huge hit!

So Berry Courvoisier:
Summer = strawberry picking season! Try it by blending Cognac, Strawberry liqueur, Triple Sec, and lime juice. Shake and strain over ice into a rocks glass, then top with a splash of club soda.
Capture the sun in a glass with this bright cocktail highlighting peaches and mangoes! Try it by blending Gin, Grand Marnier, a squeeze of lime and fresh peach and mango juices. Shake and pour into a rocks glass, then garnish with a peach slice.
The Porch Swing:
It wouldn’t be a summer cocktail roundup without sweet tea! Add a twist to the classic Arnold Palmer by blending Southern Style sweet tea, mint lemonade and your favorite bourbon. Serve over ice in a tall glass, pint glass or mason jar.

Enter the Arabian Night as we celebrate the Year of the Horse!
Guests arrived to this private residence to find themselves transported to Morocco. Walking through a custom built Moroccan inspired archway and onto the lawn, guests were greeted by servers wearing colorful sashes carrying jeweled trays of hors d’oeuvres. The mini tastes included culture samplings such as Braised Lemon-Saffron Chicken on Beet Chips, Mini Kafta Balls, Stuffed Grape Leaves and Turkey Bacon Wrapped Dates. Beyond the cocktail area lay a luxuriously draped tent, customized with rich blue and gold fabric and accented with opulent hanging lanterns. Guests were invited to take a seat at the hookah lounges around the tent or relax on the custom floor pillows and large wicker day beds.
A spice market was set just outside the main tent on a custom built Moroccan street scene, complete with fabric awnings, woven baskets and an inviting display of colorful spices. This design piece served as a stunning back drop to the different Market style food options. Guests sampled favorites such as Lentil soup, Eggplant Salad, Muhammara, Hummus and a variety of warm breads and crisps. The main event was the Persian Torched Skewer station, drawing guests in with the scents of richly flavored meats and the heat of the flames. Guests selected their torched protein of choice: chicken, lamb or beef, rubbed in a variety of spices. Bowls of spicy mint yogurt sauce, polo rice with tomato and cucumber-olive salad served as fragrant side offerings.
Twinkling lights hung overhead, connecting guests from the main tent to the stations and activities encircling it. The evening finished with the opening of a lavish Sultan’s Dessert Station overflowing with gold and mirrored trays of Turkish Delights, Baklava, Turkish Apple Tea and more. Amidst the savory and sweet delights, colorful cocktails flowed from the bar, tarot card readers revealed fortunes and belly dancers beckoned guests to dance the night away under the stars.
