We all know summer is all about the watermelon – but how many different ways can you really make it different? We’re adding one more preparation to your repertoire in the form of pickled watermelon radish slaw. We sat down with Executive Chef Elgin Woodman to see her thought process behind one of her mini plates – Coriander Cured Tuna Pastrami with Pickled Watermelon Radish Slaw and Avocado Puree.

 THE IDEA

This recipe is really an infusion of three diverse cultural flavors. The Watermelon radish slaw involves a pickling process inspired by Asian food culture. The rub used on the cured Tuna is composed of special Mediterranean spices for a slight “kick”. Finally, the Avocado Cream sauce adds a signature Latin layer of culture. The resulting dish is a blend of freshness and flavor profiles representing the diversity of the region.  Additionally, this dish has a multitude of ways to be presented above and beyond just a mini plate. Appetizers, antipasto stations, small plate courses, salads and so many more food styles could benefit from this fresh dish. As an added benefit, this is a wonderful way to add proteins to antipasto stations where red meats and pork are not an option.

THE PRODUCTION

Nothing beats having top quality components to savor during an event, and this creation made sure to deliver. This is a critical component to the Home Cured Tuna with Watermelon Radish Slaw. The production of it begins with buying the freshest tuna and curing it two days prior to your event. When the tuna is finished curing, our culinary team cleans the rub and re-wraps it for event delivery. The tuna remains uncut until just before service to maintain freshness and color. The slaw and avocado cream are also prepped and mixed onsite to ensure a crisp slaw and green avocado in every bite.

COLOR YOUR WORLD

  • Unicorn Swirls – The world has caught Miami-fever, and we’re loving it.  Bright pastels and neon colors have really taken off this summer!  Tablescapes, food, flowers and design elements have all pulled from the neon fashion trend.  Need more evidence?  Raise your hand if you’ve fallen victim to the unicorn craze (it’s ok, our hands are up too).  Fuchsia and purple add a dose of warmth to your summer style palette, and transition well from day to night.
  • Greenery – green hues are known for giving freshness to your design.  This makes it easy to incorporate using beautiful plants and floral centerpieces with exposed stems.  Add a few tall and gorgeous greens in beautiful planters to accent your next event. Not only will they provide eye-catching perimeter décor, but they serve as great room dividers and additional shade for lounge areas.
  • Mood: Sunny – yellow is always a strong summer hue, thanks to the sun! Add a bright pop of color in your linens and flowers using yellow tones.  For food, try incorporating dishes that use mango, passionfruit and lemons!

SMELL THE ROSES…AND THE LEMONS

For easy accents to your tables, pick flowers that hold up well to the summer heat!  Think proteas, callas, succulents, tropical leaves and orchids – they’ll all hold up perfectly in a gorgeous vase.  For a pop, add lemons or mix in pineapples to brighten the look.

DIVE IN

Since we’re talking summer – we hope you’ll be spending plenty of time near a pool because it is HOT!  As a fun and interactive décor add-on for your next summer event, beach balls and pool inflatables are back and better for this summer’s event style.  Flamingos, donuts, lemon slices, unicorns and even pizza have made the cut – they’re a huge hit!

BE BOLD

Start the party right! It’s summertime and we’re all about the beach, the pool and the parties. The weather is finally nice enough to be outside and you can execute all those cute ideas you’ve been saving on Pinterest!  To help, we’ve put together eight outdoor party planning tips to make you look like a pro at your next celebration!

HYDRATE
Have plenty of water options available. From weddings to casual social gatherings, flavored water stations (personalized water bottles!) on ice for guests to help themselves are always good options to have.  Try infusions like Cucumber, Strawberry or Pineapple!

STAY ICE COLD
The right ice makes a difference in your favorite cocktails.  Try oversized square ice cubes which melt more slowly, keeping your drink cool and flavorful.  Bonus – flavor the ice cubes with fruit infusions!  Our catering team is known for our Passionfruit popsicles with mint and basil for our cocktails!

KEEP IT CASUAL
Guests would rather not be hot and sweaty while dressing up for a fun party night.  Consider hosting your celebration oceanside or poolside and keeping the dress code casual.  Take advantage of your location, have your guests come in Hawaiian shirts or Cuban guayaberas.

START THE PARTY
Consider a greeting drink upon arrival for your guests while they are waiting for the ceremony to start. No one wants to sweat AND be without cocktail, am I right?

A LITTLE LEG IS FINE, JUST NOT TABLE LEGS
When it comes to seating, a linen-less table makes a beautiful accent to summer parties.  But there are options for fabric-lovers too!  Spandex linens will help keep tables from looking like they’re about to blow away.  As the printed linen trend continues to evolve, there are tons of beautiful spandex options available.  Spandex just not your thing?  Try a floor length heavy linen, such as burlap and canvas, and stray from polycotton and natural linens which tend to be lighter.  With plenty of color options, patterns and finishes, you can dress your party tables stylishly!

SMOKE THEM OUT
Nobody likes a party crasher – especially the bug kind.  Keep the bugs away without ruining your décor!  Use citronella candles or tiki torches to ward off unwanted pests.

REMAIN UNDERCOVER
As event pros – take our advice and order the tent for a daytime party (we love these!).  It will make a world of difference when it cools off your event by 10-15 degrees, money well spent for sun protection and happy guests.  If one large tent isn’t the right style for your party, consider beautiful patio umbrellas in bright colors with seating!

GO INDUSTRIAL
Are you open to a bit of industrial style at your party? Misting fans or port-a-cools around your event will make you and your guests much happier campers!

Recently we hosted a private Press Luncheon at the Vizcaya Museum and Gardens Cafe and Shop to ring in the new year with guests from our local press outlets.  The afternoon included a chance for our guests to mix and mingle, meet the A Joy Wallace team and sample some of our gourmet menu items offered at the Vizcaya Cafe and Shop.   Scroll through the images below to get a peek of the event!

A Joy Wallace Press Luncheon at Vizcaya Museum and Gardens Cafe and Shop You may be wondering what Joy Wallace is doing holding a Cinderella vinyl…allow us explain!  Prior to opening the lunch buffet – Joy addressed the press, explaining how the A Joy Wallace concept came about.  A Disney lover at heart, what better way to describe realizing her dreams, and finding Prince Charming, than Cinderella? Joy’s husband, Richard Wallace, is truly her “Prince” as she says, however her fairy tale wasn’t complete, she still wanted her “castle to entertain guests”.  And so A Joy Wallace was born, dreams were realized, and 12 years ago, she was granted the opportunity to be the exclusive caterer for the Vizcaya Museum and Gardens Cafe and Shop.  This honor is not one that Joy takes lightly.  Over the years she and our Corporate Executive Chef Elgin Woodman have been working to develop a menu that would fit it with the rich historic feel of Vizcaya.

A Joy Wallace Press Luncheon at Vizcaya Museum and Gardens Cafe and ShopTwo sandwich options were available to our guests, a classic Cuban Panini with Roasted Mojo Pork, Ham, Swiss Cheese, Pickles and Mustard, as well as the Cafe and Shop’s popular Sweet and Savory Grilled Cheese.  This is not your ordinary grilled cheese sandwich!  This grilled cheese is made on a Herb Focaccia bread with Spinach, Swiss Cheese, Grilled Onions and Fig Jam.

For over 12 years, A Joy Wallace has had the honor of managing the Vizcaya Museum and Gardens Cafe and Shop. This includes not only designing an elegant cafe menu worthy of this amazing property, but also the development and procurement of one of a kind gifts at the shop.  Located on the north side of the main house, patrons can dine inside the cafe (which used to be John Deering’s bowling alley!) or outside on the North Patio next to the swimming pool and North Garden.  The cafe menu features a variety of gourmet options include fresh salads, sandwiches, homemade sweets and wines from Deering Vineyard.  In our shop, you can find a fabulous selection of books, homegoods, jewelry, clothing, tea and wine inspired by Vizcaya.
