Overlooking the bay, a family affair with the Miami HEAT made for another incredible evening with the HEAT Charitable Foundation!
Guests arrived at the American Airlines Arena just before sunset. As vehicles were whisked away, guests entered through the newly remodeled VIP Lexus entrance before enjoying cocktail hour inside the HEAT locker room. The opportunity to mix and mingle with HEAT Players and key staff is one guests will likely never forget!
Guests moved to the beautiful Xfinity Plaza after cocktail hour, for a night of dinner and dancing. A twist on previous HEAT gala designs, this year’s color scheme swapped out red, for blush! Our design concept for dinner used a modern mix of custom wrapped acrylic royal tables, and mirror-topped round tables. Each royal table was set with a black and white marble print, with black ghost chairs. Additional accents include rose gold flatware and chargers. Our round tables consisted used shimmering silver underlays with blush “coin” overlays plus a reflective mirror topper, set against clear acrylic ghost chairs. For accents, we used hammered matte black flatware and swirled black and white charger for a smoke effect.
Because no party is complete without florals – we focused on white and blush tones of tulips, callas, anemones and more in clear glass vases to show lots of gorgeous green stems. And of course = plenty of candlelight!
Along with plenty of fun and games with the HEAT players, the guests ended the evening with an incredible performance by Mary J. Blige!

The University of Miami recently celebrated the inauguration of their new president by taking him around the world. Ok – not really, but we WERE able to design an event to make it feel like that. The theme title was “Charting the Course to Our New Century.”
As guests arrived, music provided by the University of Miami set the mood for their grand entrance across the bridge from the Watsco Center where the Inauguration Ceremony took place, all the way to the Student Center Complex Lakeside Patio.
In front of them, guests found a spectacularly decorated space with four large structures complete with custom swag ceiling treatment in blue, yellow, black, green and red inspired by the unifying colors of the Olympic Games. Large drum chandeliers accented each of these four areas where custom food stations were designed by continent. A large central structure and wrap around bar for beverage service was created as focal point of the entire event with a mix of coordinating drum style chandeliers hanging from the center of the structure. Interior style high tops were placed throughout the space to bring continuity to the design accented with “Course Charting” inspired centerpieces. Some of the bar tops even had custom world map decals on them to really tie in the theme.
Stations were divided into Asia, Africa, Europe and the Americas.
Asia consisted of hanging red lanterns, pho dogs, pergolas, lanterns, florals, bamboo mats and plants.
Africa was uniquely designed with masks and up-lit foliage. Proteas, sand, grass and palms were used to accent the buffet and animal print fabrics were woven into the station design between food elements.
A European market was designed with wood planks, slates, buckets, barrels and abundant baskets of flowers. Iconic landmarks like the Eiffel Tower and Big Ben were knit discretely into the design to drive the theme home.
The America’s station was inspired by the menu selected. A custom built ‘South American Ruins’ backdrop was designed to fit the theme and interior style details accented the buffet to complement food service.

We all know summer is all about the watermelon – but how many different ways can you really make it different? We’re adding one more preparation to your repertoire in the form of pickled watermelon radish slaw. We sat down with Executive Chef Elgin Woodman to see her thought process behind one of her mini plates – Coriander Cured Tuna Pastrami with Pickled Watermelon Radish Slaw and Avocado Puree.
This recipe is really an infusion of three diverse cultural flavors. The Watermelon radish slaw involves a pickling process inspired by Asian food culture. The rub used on the cured Tuna is composed of special Mediterranean spices for a slight “kick”. Finally, the Avocado Cream sauce adds a signature Latin layer of culture. The resulting dish is a blend of freshness and flavor profiles representing the diversity of the region. Additionally, this dish has a multitude of ways to be presented above and beyond just a mini plate. Appetizers, antipasto stations, small plate courses, salads and so many more food styles could benefit from this fresh dish. As an added benefit, this is a wonderful way to add proteins to antipasto stations where red meats and pork are not an option.
Nothing beats having top quality components to savor during an event, and this creation made sure to deliver. This is a critical component to the Home Cured Tuna with Watermelon Radish Slaw. The production of it begins with buying the freshest tuna and curing it two days prior to your event. When the tuna is finished curing, our culinary team cleans the rub and re-wraps it for event delivery. The tuna remains uncut until just before service to maintain freshness and color. The slaw and avocado cream are also prepped and mixed onsite to ensure a crisp slaw and green avocado in every bite.

Dreamy does not even begin to describe this Disney inspired fairytale wedding we had the pleasure of working on. The bride was in love with Disney (who isn’t?!) and wanted her guests to feel like they were stepping into a fairytale.
THE DEETS ON THE DESIGN:
Custom built bars were designed with mirror accents for an elegant yet magical feel. Large mirror frames were adorned with love quotes written in a calligraphy from (by Carla Hagan Designs) famous Disney movies. For example, one of the mirrors read “you will always be my greatest adventure” from one of my personal favorites – UP.
From our director of design Jessica Zeidler-Rojas: We wanted to incorporate whimsical details like roses under cloches [to emulate Beauty and the Beast] and crystal candelabras.
There were 3 styles of guest table. Each equipped with their own style of linen, centerpiece, water goblet, napkin, chair and charger. We know what you’re thinking – this can get out of hand VERY quickly. PRO TIP – Keep something that is similar in each design to keep things cohesive. For example: a colorful water goblet, or napkin. These items can be fun, colorful, whimsical details without over taking any one design. There were two different styles of chairs used for the guest tables – a gold chiavari and a gold napoleon. The napoleon brought a fairytale feel while the chiavari kept it timeless. Garden roses, peonies, hydrangea, orchids & veronica made for bright, lively centerpieces on each table
Let’s talk about the sweetheart table for a sec – or should we just stare?! Trees and hanging listeria really made it feel like a storybook, almost like you had just been transported into a dreamland. The bride and groom weren’t the only lucky ones with these beauties behind them. They were placed all over the room. Jessica says “with such a large guest count – we really wanted to make the room a design of it’s own, but still tie into the centerpieces.”
We were so lucky to have been on board with such amazing vendors to create this fairytale. Teamwork truly makes the [wedding] dream work!

With the 4th of July holiday approaching, we know many of you will be hitting the beach to celebrate!
This week at the office, we’ve been chatting about what’s in our beach bags. Grab a friend, and we’ll tell you what to throw in your bag to make the most out of your beach holiday!
First things first, cocktails! No summer day is complete without a little refreshment. Andrew Smith (Director of Operations/bartender extraordinaire) recommends something easily batched to bring along in a plastic beverage dispenser. His favorite? “Reposado tequila, blended with lemonade, elderflower syrup and lots of ice. It gives you the tropical taste of Miami, and the mix of sweet, sour and fresh flavors are summer in a glass!”
Next up, it’s not a beach day without snacks to keep it going. Our Executive Chef, Elgin Woodman, likes to make easy sweet & salty trail mixes to bring to the beach. Her favorite ingredients? Candied pecans, mini pretzels, chocolate covered peanuts (M&Ms anyone!?) and lightly salted cashews. Feel free to throw in a few ingredients from your pantry or fridge – trail mixes are one of the most versatile snacks around!
By the way – in need of a little relaxation? Add a book to your beach bag! There’s nothing quite like getting lost in a great read as you enjoy the ocean breeze and sand between your toes. We surveyed our sales & marketing team, and the top fave was Girl Boss by far! (No surprises there, it’s a best seller!)

They come in all kinds of designs, colors and patterns like mandala prints, lemon slices and watermelon! Our personal foodie fave? The donut (you saw that coming – never met a donut we didn’t like!) COLOR YOUR WORLD
- Unicorn Swirls – The world has caught Miami-fever, and we’re loving it. Bright pastels and neon colors have really taken off this summer! Tablescapes, food, flowers and design elements have all pulled from the neon fashion trend. Need more evidence? Raise your hand if you’ve fallen victim to the unicorn craze (it’s ok, our hands are up too). Fuchsia and purple add a dose of warmth to your summer style palette, and transition well from day to night.
- Greenery – green hues are known for giving freshness to your design. This makes it easy to incorporate using beautiful plants and floral centerpieces with exposed stems. Add a few tall and gorgeous greens in beautiful planters to accent your next event. Not only will they provide eye-catching perimeter décor, but they serve as great room dividers and additional shade for lounge areas.
- Mood: Sunny – yellow is always a strong summer hue, thanks to the sun! Add a bright pop of color in your linens and flowers using yellow tones. For food, try incorporating dishes that use mango, passionfruit and lemons!
SMELL THE ROSES…AND THE LEMONS
For easy accents to your tables, pick flowers that hold up well to the summer heat! Think proteas, callas, succulents, tropical leaves and orchids – they’ll all hold up perfectly in a gorgeous vase. For a pop, add lemons or mix in pineapples to brighten the look.
Since we’re talking summer – we hope you’ll be spending plenty of time near a pool because it is HOT! As a fun and interactive décor add-on for your next summer event, beach balls and pool inflatables are back and better for this summer’s event style. Flamingos, donuts, lemon slices, unicorns and even pizza have made the cut – they’re a huge hit!
When designing your event theme, be bold for summer! Color blocking is back, and by pairing your bold color selections with a few key neutrals, you’ll be able to create a cohesive theme throughout. Check out our summer party inspiration board and real event photos below!
